Hi, I’m Karen Knowler, also known as The Raw Food Coach. My fascination with the benefits of raw food began in 1993 at the tender age of 20, when I went from junk food eater to vegetarian within a few short months, and then soon after heard about the concept of raw and was instantly sold. Back then, although there were a few good books about raw food floating around, I found it a real challenge to find accessible, trustworthy information on raw food that was easy to understand and simple to put into practice – especially for a modern gal like me who didn’t have the time or the inclination to spend hours chopping vegetables or “baking” raw cakes every night after work!

Since then, I’ve gone from raw food rookie to international raw food coach, chef and teacher, and along the way I got passionate – VERY passionate – about making raw food easy, simple and fun to understand for everyone, so that no-one has to go through the maze of information and confusion that I had to navigate. So What Exactly Is Raw Food?

Here’s the most basic explanation: Raw food is food that hasn’t been heated above 48 degrees centigrade (that’s 117 degrees Fahrenheit). Simply put, that usually means uncooked food – or more specifically, foods in their natural state.

This naturally includes foods such as vegetables, fruits, nuts and seeds. But there’s also a whole array of raw foods both within these food groups and outside them – in fact I list all 24 raw food groups in the book, you’ll be amazed!

Indeed, one thing that surprises everyone is the sheer diversity and variety of foods and dishes you have available to you when you eat raw. If you’re like most people with an interest in eating more raw food, one of the things holding you back may be the thought that you’ll be left with a boring and monotonous diet of celery sticks, apples and carrots!

The truth is, with raw food there’s far more variety available to you than you can possibly imagine; in fact, there are infinite ways to eat raw food, just as there are infinite ways to eat cooked food, and there are literally thousands of different raw foods and recipes in the world today for you to choose from. You’ll find that your raw food choices literally span the entire spectrum of food options – from a simple salad, for example, to a gourmet dinner of raw lasagne or pizza or even curry! Oh, and did I mention chocolate…?

And it really isn’t that difficult to get started… when you know how.

And that’s what I’m ready to teach you…


Why Raw Food Brings You Such Amazing Health and Vitality Benefits

Because raw food hasn’t been cooked, it still has all of its nutrients intact. This is what makes it so good for you – there’s literally NOTHING lost. You see, cooking reduces and even destroys many of the nutrients in your food – especially the oxygen, phytonutrients and enzymes.  In contrast, every bite of raw food is a powerhouse of nutrition and energy – and life force, specifically – which all gets passed on to you.

The people I work with tend to find – when they give raw food a serious shot, that is – that the physical benefits reveal themselves very quickly. You really can expect to see and feel noticeable physical changes in as little as 24 hours.

These changes can be as simple as niggling aches and pains disappearing, through to seeing a difference in body tone, clearer eyes, and much greater energy. The longer you’ve been eating raw food, the more significant the changes you’ll see.

RunnerPeople who have been eating mostly raw food or all raw food for a year or more can literally look 10 years younger than they actually are – with shiny hair, glowing skin and sparkling eyes, as well as being completely rid of aches and pains and other minor or acute health issues.

The fact is that we all rejuvenate on raw and living foods. In the process of replacing your cells and bloodstream with cleaner, better nourished, more ‘alive’ cells, you can’t help but grow younger and look and feel better.

There have even been real life case studies of people who have recovered from serious illnesses and disease – sometimes being just days away from death – as a result of switching to raw food.

But the benefits also extend to the emotional, mental and spiritual for many people. Soon after you begin to eat more raw food, you’ll feel a greater sense of aliveness. You’ll feel calmer, more in control, and more harmonious in your thoughts and feelings and you’ll sense a whole new level and type of energy bubbling up from within. Yes, it’s quite addictive!

Dispelling the Myth of the ‘Raw Food Diet’

One of the most common misconceptions people have about raw food is that you have to take an ‘all or nothing’ approach. Nothing could be further from the truth. There is no such thing as ‘the raw food diet’ – just as there’s no such thing as ‘the cooked food diet’.

It’s important to understand that you don’t have to eat exclusively all raw food, or as near to it as possible, to see and feel the benefits. You can begin by gradually increasing the amount of raw food in your diet – and I’ll show you how - so that you’re eating a mixture of raw and cooked foods. You find the exact balance that works best for you with my gentle “no-brainer” approach.

In fact, you’ll find the emphasis in Raw Food Made Simple is on gradually introducing more raw food into your diet in a way that literally ANYONE can do. This is ultimately a better, more successful approach than trying to make an overnight switch from cooked to raw.
