Hi, I’m Karen Knowler, also known as The Raw Food Coach. My fascination with the benefits of raw food began in 1993 at the tender age of 20, when I went from junk food eater to vegetarian within a few short months, and then soon after heard about the concept of raw and was instantly sold. Here’s the most basic explanation: Raw food is food that hasn’t been heated above 48 degrees centigrade (that’s 117 degrees Fahrenheit). Simply put, that usually means uncooked food – or more specifically, foods in their natural state.

Because raw food hasn’t been cooked, it still has all of its nutrients intact. This is what makes it so good for you – there’s literally NOTHING lost. You see, cooking reduces and even destroys many of the nutrients in your food – especially the oxygen, phytonutrients and enzymes. In contrast, every bite of raw food is a powerhouse of nutrition and energy – and life force, specifically – which all gets passed on to you.

One of the most common misconceptions people have about raw food is that you have to take an ‘all or nothing’ approach. Nothing could be further from the truth. There is no such thing as ‘the raw food diet’ – just as there’s no such thing as ‘the cooked food diet’.
It’s important to understand that you don’t have to eat exclusively all raw food, or as near to it as possible, to see and feel the benefits.
